Directions

  1. To prepare Millet Kitchari, shake the packet well to evenly mix the spices, millet, and moong dhal.
  2. In a pot, heat 1 tablespoon of Ghee or Coconut Oil (Vegan), Sesame Oil, Mustard Oil or Olive Oil.
  3. Saute the Kitchari mix for 1 minute.
  4. Add 4-6 cups of water, cover with lid, cover with a lid, and bring to a boil.
  5. Reduce the heat and let it simmer for 15-20 minutes, stirring occasionally, until the mixture is tender.

For a more flavorful dish, you can add finely chopped vegetables of your choice, such as carrots, green beans, broccoli, zucchini, etc. to Kitchari while it simmers. Once ready, garnish with fresh coriander, chilies for extra heat, yogurt, and a squeeze of lemon juice. Enjoy the delicious and easy Kitchari.
